Margherita Pizza recipe

While I'm on vacation having fun in the wilds of Northern Ontario far away from any internet connection, my good bloggy friend Nancy from Owen's Olivia has agreed to fill in for me today!

Hey y'all!  I'm Nancy from Owen's Olivia, and I am so happy to be filling in for Sarah today.  I am sharing with you a wonderful Margherita pizza that is perfect for the summertime, especially if you grow a garden.  Don't let my poor food styling skills fool you.  This pizza tastes great! 

 
Ingredients:  (To make one pizza that feeds 3 people)
 

1 pizza crust ( I like to use Annie Eat's recipe for pizza dough.  Half this recipe for one pie [3 people] or use as directed to make two pies [6 people]) 
1-2 Tablespoons Olive Oil 
Handful fresh basil, rinsed, dried, and chopped 
1/8 tsp of Kosher salt
 Fresh ground pepper 
4 medium tomatoes, sliced 1/4 inch thick 
2 cups shredded mozzarella
 Balsamic vinegar
 Pizza stone Pizza board, not mandatory but really nice to have 
A cup of water 
 Cookie sheet 

 Place pizza stone and cookie sheet in oven and heat to 500 degrees.  Your cookie sheet will be below the pizza stone by one or two racks.  Roll out your dough thin on parchment paper on the pizza board.  Spread olive oil over dough with a brush.  Sprinkle basil, salt, and pepper on dough.  Place tomatoes in a circle covering the entire pie (unless you want a crust).  Sprinkle with cheese. 


Once the oven has reached 500 degrees, take the pizza board to the oven and slide the parchment paper with the pizza onto the hot stone.  With the cup of water, pour it into the cookie sheet.  Be careful of hot steam.  Cook 12-14 minutes until the cheese is bubbly and starting to brown.  Once it is cooked, place the pizza onto a cookie rack.  This will help you not get soggy bread from condensation.  Serve with balsamic vinegar or eat as is.  Yum!! *We like to use the other pizza pie to make cheese bread, but you can accommodate to fit your family's needs.
